1. Soak Your Plank: Soak the cedar plank in water for 15–30 minutes (longer is fine). This prevents it from burning and allows steam to release as it cooks, helping with flavor.

Pro tip: Soak it in white wine, cider, or even beer for added depth.

2. Preheat Your Oven: Set your oven to 400°F (204°C). Place a baking sheet or oven-safe dish on the lower rack to catch any drips or juices from the plank.

3. Prep the Salmon:

  • Pat the fillets dry.
  • Drizzle with olive oil or melted butter.
  • Season with salt, pepper, and optional toppings like lemon slices, minced garlic, or fresh herbs.

4. Place on the Plank: Once the plank is soaked, place it on a baking sheet. Add the seasoned salmon directly on the plank, skin-side down.

5. Bake: Slide the plank + baking sheet into the oven and bake for 15 – 20 minutes, depending on the thickness of your salmon. The salmon is ready when it flakes easily with a fork and reaches 125 – 130°F internally (for medium doneness).

  • You may notice the plank darkening or lightly smoking. That’s normal – and adds flavor.

6. Serve Directly on the Plank (Optional but Stunning): Remove carefully and serve right on the cedar plank for a beautiful, rustic presentation.
