This recipe is fantastic for Valentine’s Day – a romantic surf and turf dinner for 2: Alder wrapped & smoked steak, cherry planked lobster tail with smoked clarified butter and grilled artichokes.

INGREDIENTS

For the steak:

  • Alder Wrap
  • ½ cup Hickory Smoking Chips
  • 2 – 8oz Ball-cut Sirloin Steaks
  • 1 Tbsp. Kosher Salt
  • ½ Tbsp. Smoked Paprika
  • ½ Tbsp. Dried Oregano
  • ½ Tbsp Black Pepper, coarse ground
  • ¼ Tbsp. Ground Cumin

 

For the lobster:

  • 1 5 x 11” Cherry plank
  • 1-1.5 lb. Lobster Tail
  • 1Tbsp. Fresh Parsley, chopped
  • ½ Tbsp. Kosher Salt
  • ½ Tbsp Black Pepper, coarse ground
  • 1 Lemon

 

For the artichoke:

  • 1 Small Artichoke
  • ½ Tbsp Kosher Salt
  • Drizzle of Olive oil

 

Clarified smoked butter:

DIRECTIONS

  1. Combine the 5 dry spices and rub onto the steaks.
  2. Set the steaks in a cold smoker and smoke with the hickory chips for 1 hour.
  3. Preheat the grill to 450°F and soak the plank in hot water for at least 15 minutes.
  4. Soak the wrap in warm water for several minutes and then tear into 4 2” strips. Wrap 2 strips around each steak and secure with twine.
  5. Sear the steaks for 2 minutes per side and then set on the top rack of the grill, close the lid and cook to desired doneness.
  6. Use a sharp knife to split the lobster tail lengthwise and season with parsley, salt and pepper.
  7. Place the lobster shell side down on the plank and set on the grill. Cook with the lid closed for 10 minutes or until done.
  8. Peel away the outer leaves of the artichoke and trim the stem. Cut in half lengthwise and season with salt and olive oil.
  9. Place artichoke flat-side down on the grill for 5 minutes.
  10. Serve the steaks, lobster and artichoke on a large platter with lemon wedges and smoked clarified butter for dipping.
