Smoked Loaded Nachos on the Grill Recipe
When I have friends and family over to BBQ, I want to eliminate as many trips to the kitchen as possible. The more I can enjoy the sunshine outside with my friends, the better. But there are a lot of snacks that I normally prepare in the oven or on the stove, so I decided to venture out and start making my go-to-oven-recipes on the grill. And with much success! Loaded nachos is a must when I have people over, so I decided to prepare this delicious snack on the grill. I used Northwest Blend smoking chips to season the chips with a natural smoke flavor and it turned out amazing!

INGREDIENTS
- Northwest Blend Smoking Chips
- 1 bag Tortilla Chips
- 1 lb. Chicken Thighs
- 3 Tbsp. BBQ Sauce
- 1/2 lb. Cheddar Cheese, shredded
- 1/2 lb. Mexican Blend Cheese, shredded
- Black Olives, sliced
- Jalapenos, sliced
- Sour Cream
- Salsa
- Cilantro
- Cooking Spray

CHEF'S TIP
Add some blue corn tortilla chips to the nachos for a pop of color.
DIRECTIONS
- Soak the NW Blend smoking chips in water for 20 minutes.
- Preheat grill to 300°F.
- Brush chicken thighs with BBQ sauce and add to grill. Smoke for 1.5 to 2 hours, or until cooked. Shred chicken thighs and set aside.
- Spray aluminum tray with cooking oil and add tortilla chips.
- Top chips with cheese, jalapenos and black olives.
- Add more smoking chips to the grill, place aluminum tray on grill and close the lid. Cook for 3-5 minutes or until the cheese is melted.
- Add shredded chicken, sour cream, salsa and fresh cilantro to chips.
- Enjoy!
